JOB TITLE: PASTRY Chef
JOB SUMMARY:
The Pastry Cook is responsible for production of bakery & confectionery products following instruction from the Pastry Head Cook. All preparation must be done as per recipe given and to produce the highest possible standards of bakery & dessert products for presentation and service.
DUTIES AND RESPONSIBILITIES:
- Main duty of pastry cooks is to prepare cakes, cookies, pies, puddings and other deserts according to recipe as directed by the Executive Chef and as supervised by the Pastry Head Cook.
- This may involve working with appliances like ovens and electric mixers, combining ingredients, shaping dough and blending colors.
- Pastry cooks also organize the kitchen, gather and stock ingredients, and plan desert menus.
- Measures ingredients, using measuring cups spoons
- Performs pastry procedures such as; mixes ingredients to form dough or batter, using electric mixer or beats stirs ingredients by hand, shapes dough for cookies, pies, and also fancy pastries, using pie dough roller cookie cutters or by hand, spaces shaped dough portions in greased or floured pans inserts them in oven, using long-handled paddle peel.
- Adjusts drafts or thermostatic controls to regulate oven temperatures
- Prepares cooks ingredients for pie fillings, puddings, custards, or other desserts. Pours filling into pie shells tops filling with meringue or cream Mixes ingredients to make icings. Blends colors for icings as well as for shaped sugar ornaments statuaries.
- Decorates cakes pastries.
- Checks all bakery production equipment for safe and proper operation and uses.
- Co-ordinates with co-workers to make smooth operation- giving helping hand when it is needed.
- Implement and maintain wastage control within the Bakery / Pastry department.
- Observed proper hygiene and maintain the working area properly clean before and after production.
- Constant attention must be paid to Safe Work Practices, immediately addressing any unsafe act witnessed. This applies to all Food & service staffs.
- Ensures that all bakery & dessert products are prepared and stored in a safe hygienic manner and in compliance with Food Safety regulations
- Perform other task as instructed by the Executive Chef and by the Pastry Head Cook.
- Follow, imply and maintain all ISO standards and requirements.
Job Requirements
- At least 5 Years’ experience of working in a professional kitchen or similar position.
- Effective communication skills.
- Kitchen experience and management
- Ability to cope under stressful conditions
- Strong leadership skills
- Ability to pay attention to details: adherence to specific ingredients and measurement needed for various menus
- Ability to make quick decisions
- Ability to maintain a high level of hygiene and cleanliness in the restaurant area
- Ability to work effectively as part of a team
- Ability to cope under stressful conditions
- Possess strong management and organizational skills.
- Ability to be creative; always willing to try something new.
- Ability to handle criticisms from customers
